Hey, hey! I’m popping in this morning to share a delicious, make-ahead breakfast option! If you follow me on Instagram, you know I’m a huge fan of both overnight oats and chia pudding- this recipe combines these two favorites of mine into one sweet and tangy mix! Since my post on Instagram, I’ve updated this recipe, swapping out a few ingredients and in my opinion, this updated version of Lemon Cheesecake Overnight Chia Oats is even better than the original!
I switch up the toppings on this baby, sometimes using blueberries or strawberries, and other times just adding a bit of shredded coconut- play around with what satisfies your taste buds! Hope you enjoy!
Ingredients:
- 3/4 cup almond milk
- 1/3 cup vanilla Greek yogurt
- Juice of 1/2 a small lemon
- 1/2 banana
- 1/4 tsp vanilla extract
- 1/2 cup rolled oats
- 2 tbsp chia seeds
- lemon zest
- Toppings of your choice (berries and coconut flakes are a delicious options)
What to do:
Blend almond milk, vanilla Greek yogurt, lemon juice, banana, and vanilla extract in a blender. Pour mixture into mason jar (or other airtight sealed container). Add oats, chia seeds, and lemon zest to the jar and stir well. (I used about 1 tsp of lemon zest, but you can change this up!) Put the lid on your jar and place in the refrigerator overnight. In the morning, stir well again, adding in an additional splash of almond milk if necessary. Mix in your berries and toppings and enjoy!
