Hello and happy Monday to you! Today, I’m diving right into my dinner menu for the week for those of you looking for some cooking inspiration!
- Monday: Sausage and Peppers Arrabbiata from Against all Grain cookbook
- Tuesday: Fish Tacos
- Wednesday: Buffalo Chicken salad
- Thursday: No cooking! We are trying out a new restaurant in Chicago called Duck Duck Goat (the chef is Stephanie Izard from Top Chef who also owns Girl and the Goat). We made reservations in April, so are definitely looking forward to this outing!
- Friday: Homemade BBQ chicken pizza (with red onion, cilantro, and mozzarella cheese).
I’m really looking forward to Monday’s meal. I’ve never made this dish, but thought it would be perfect for this week, as Whole Foods is still having a great sale on Italian sausage. I opted for a combo of regular Italian sausage and spicy! The base of this meal is spiralized sweet potatoes, which I am always of fan of. Tuesday’s fish tacos (made with tilapia) I’ll serve in butter lettuce with a side of black beans. Wednesday is a husband favorite, Buffalo Chicken salad…this is one of those dinners I like to refer to as “something to make when there’s nothing to make.” If you are a fan of Buffalo chicken wings, this salad is perfect. I’ll share how we put this simple salad together later in the week! And finally, my inspiration for Friday’s BBQ pizza came from having lots of left over crust to use up after a fun afternoon of pizza making this weekend with girlfriends! Oh and speaking of the weekend…here’s a little recap for ya!
Friday evening, I picked up a few baby shower gifts before stopping into Whole Foods to grab turkey burgers (which were on sale) for dinner and supplies for pizza-making on Saturday. We grilled late and just enjoyed relaxing after our dinner. I spent Saturday morning cleaning in preparation for an afternoon visit from two of my best girlfriends! We had planned on a little kayaking adventure along the Chicago river, but the hot weather along with impending storms kept us indoors. We had a blast making pizzas, enjoying afternoon wine, and chatting the day away! For our pizzas, I picked up mozzarella, Asiago, green pepper, onion, and pepperoni.
Last minute, we threw some kalamata olives onto one of our pizzas and all agreed it was a super tasty addition! After the gals left, I squeezed in a quick at-home workout then spent some time looking up creative ways to organize greeting cards (odd thing to organize I know) and random paperwork. I think I’m going to go for the binder way of organizing, since any additional furniture (filing cabinets, etc.) is out of the question in our small apartment!
Sunday: I savored my coffee in the morning, flipping through cookbooks as I attempted to plan out our dinners for the week. I whipped up some cherry, almond, banana oatmeal for breakfast, which was delicious. Once I had my dinner plan pretty set, it was off to the grocery store. We picked up our necessities for Monday and Tuesday’s dinners, as well as our lunch and breakfast essentials for the week. Our lunches are looking like a mix of turkey wraps, salads, and leftovers! Once we loaded our groceries in the car, Matt took off for home, while I walked over to my girlfriend’s house. She was having her wedding make-up trial, and I’m always down for participating in girly things! Consensus? She looked gorgeous and crossing this wedding task off her list means we are just one step closer to the big day!
Then, it was back home for a late lunch- a salad with red onion, avocado, strawberries, feta, and some sliced turkey. Oh, and my favorite chips that I can polish off in one sitting if I’m not paying attention- Late July Sweet Potato chips. After lunchin’ and some laundry, I packed up my bag and headed to an afternoon Barre class, which had me shakin’ and sweatin’ in the best way! I decided to go for a Barre class, rather than doing the Yoga workout for 21 Day Fix Extreme. Other than this switch up, I’ve stuck to the program pretty well and love the workouts! After a quick shower, I worked on this blog post before making dinner: a small pizza with one of the mini crusts I had leftover. I switched this one up a bit, taking a pass on red sauce and instead opting for an egg, spinach, and pancetta topping with a garlic & olive oil drizzle. YUM! After dinner, I crossed off a few more work-related to-do’s before curling up on the couch with a glass of wine and my new book, Sarah’s Key. Anybody read this one?
