Hello and happy Tuesday! Today, I’m sharing a fun date night in idea with you! As much as I love trying out new restaurants or hitting up a roof-top bar for sweet, summer cocktails, I equally enjoy date nights at home! Watching movies, catching up on our favorite Netflix series, ordering take-out, or whipping up our own fun meal…date nights at home are relaxing and cost-effective!
On Friday, we opted to do a homemade pizza and Olympics filled evening! Recently, Simple Mills, a Chicago-based company, sent me a package of their Almond Flour Pizza Crust. Simple Mills really caters to those who, like me, have to steer clear of gluten. They have a wide range of delicious products with almond flour as the base; from muffin mixes, to crisp, flavorful crackers, to cookie and pancake mixes, this company has some seriously mouth-watering options. (I cannot wait to snag the pumpkin muffin mix for a warm, satisfying fall breakfast!)
On to our date night! Pizza is always a good choice, especially on a Friday, and it’s made even better when using an all-natural, simple ingredient pizza crust! This is pizza you can feel good about eating and Simple Mills makes the pizza dough experience a cinch- you only need 2 ingredients in addition to the mix itself!
Here’s what you need to create this awesome dough!
- 1 box Simple Mills Almond Flour Pizza Crust
- 2 tbsp Apple Cider Vinegar
- 2 tbsp Grape Seed Oil
- 6 tbsp Water
Follow the directions from the box: Preheat oven to 350. Whip together wet ingredients in large bowl. Add in flour mix and stir well, until all ingredients are evenly mixed. Divide the dough into 2 equal sized balls and lay atop an oiled baking sheet. Flatten the balls into crusts with raised edges. Bake crusts for 5 minutes on their own before adding toppings.
Once you add your toppings on, you’ll bake for an additional 10-15 minutes.
The dough is so flavorful, thanks to hints of garlic and oregano! There’s only 8 ingredients making up this crust, including cauliflower, flax meal, and almond flour- truly a simple, yet delicious pizza crust that won’t leave you with any pizza “guilt.”
Since we’re talkin’ pizza…I figured I’d share a pizza topping option with you! Although we kept one of our pizzas classic: pepperoni, cheese, and green pepper, I’ve been partial to pancetta pizza lately! Here’s what I used to make this more gourmet-esque pizza!
- 3 slices Pancetta
- 2 garlic cloves (minced)
- Handful of chopped spinach
- Olive oil
- Sprinkling of mozzarella
- 1 egg
Drizzle your Simple Mills pizza crust (after you’ve done initial 5 minute bake) with olive oil and rub garlic in. Evenly distribute the spinach (you could also use arugula) over the crust, then, layer the pancetta over. Sprinkle on mozzarella. Crack an egg right over the pizza, making sure not to let any pieces of shell fall. Pop in the oven for 15 minutes.
Matt, despite being a “if it ain’t broke don’t fix it” kind of person, loved this combo! We both had two slices of each type of pizza, making it a totally satisfying meal! For your date night (whether with a significant other or with girlfriends) pair your pizza with wine or cocktails of your choice! Make the experience intimate with a candle and fresh flowers…who said dinners at home can’t be romantic?!
