Hey hey and happy hump day to you! Today I’m sharing a recipe for a sweet, chewy energy bar that contains only 4 ingredients and is super simple to make!
A few months ago, I picked up dried mango at Trader Joe’s to try as an alternate snack item. Even though I loved the taste, I found the pieces incredibly hard to chew, so I wasn’t enjoying them as much as I thought I would.
That’s when the inspiration hit- I needed to get the mango pieces smaller and incorporate them into something else…enter Mango energy bars (or homemade Lara Bar). Packed with fiber-rich dates, tasty mango, coconut flakes, and walnuts, these bars make the perfect on-the-go snack or after dinner dessert!
Here’s what you need:
- 1.5 C dates (pitted) packed
- 1 cup dried mango
- 1 cup walnuts (you can also use almonds or use a mix of both!)
- 2 tbsp shredded (unsweetened) coconut
Place all ingredients in a food processor and combine until the mixture clumps together. (If needed, you can add a bit of water- I have never had to do this because the dates I get at Trader Joe’s are very moist). Put mixture on a large sheet of parchment paper.
Place a second sheet of parchment paper on top of the mixture, so that is sandwiched between the 2 sheets. Gently smash down with your hands until the mixture is flatter. Then, use a rolling pin to even it out. Place the flattened mixture in a baking dish or on a platter and refrigerate (about an hour). Once the mixture has firmed, use a pizza cutter to cut bars into the size of your choice!
