Hello there! Hope you’re having a great week so far! I’ve had some fun the last 48 hours experimenting with a couple fun snack/dessert recipes! One of them being a Mint Chocolate (Lara Bar-inspired) Protein Bite recipe. I had leftover dates from the mango bars I made last week and wanted to put them to good use. If you know me well, you know I’m a sucker for anything mint chocolate…so these were a welcome, though accidental, creation.
Keeping in the tradition of homemade Lara Bars, this recipe’s base is dates and walnuts. Here’s what you need to make these sweet, minty bites!
- 1 cup pitted dates (comes out to about 10 dates)
- 3/4 cups walnuts
- 1/2 Cup Chocolate protein powder (I used Vega One Chocolate since there is no added sugar- the dates alone provide enough sweetness)
- 1/2 tsp Peppermint extract
- 1 tbsp almond milk
- Pinch of Sea Salt
Place all ingredients minus the almond milk into a food processor. Begin to pulse. The mixture should start to look “grainy,” but eventually, you want this to become dough-like. Begin to add in the almond milk a little bit at a time, each time you add, pulsing a bit more until you get a doughy texture. (You may find you need less almond milk which is why I say add a bit at a time- this will depend on how moist your dates are, so you really have to play around!)
Once you have your dough, shape into small, bite-sized balls. Refrigerate for at least 30 minutes so the bites firm up! Think of these as your healthy Thin Mints! Girl Scouts got nothin’ on us now!
