Hey guys! Hope you had a wonderful Thursday! I wanted to quickly share an easy and delicious breakfast option with you all. A couple months ago, while staying in a hotel for my cousin’s wedding, I was introduced to baked eggs via the complimentary hotel breakfast. It’s a genius idea and I’ve been rotating these eggs into my mornings quite often since having them at the hotel! They taste similar to soft or hard boiled eggs, depending on how long you cook them. I love how “clean” looking they come out, and it’s a nice change-up from my typical scrambled eggs! This is also an awesome option if you are having out-of-town guests, as it’s a no-mess breakfast and you can cook a bunch of the eggs at the same time using a muffin tin. You can prep these ahead of time as well and just reheat them (or eat them chilled) when you need breakfast on the go!
Making these is simple. Preheat the oven to 350. Spray your muffin tin (if you’re only making a few, be sure to only spray the sections you’ll be using). Next, crack an egg into each muffin section (as many as you plan on making). Once oven is ready, pop them into the oven and cook for 15 minutes (a little less if you want the yolk to be soft boiled). Remove the muffin tin and use a butter knife to scrape around the outside of the egg so it pops out easily. Sprinkle with salt and pepper and pair with avocado, toast, your favorite fruit…anything! An easy, high-protein breakfast!
