Happy Monday to you! It was a beautiful weekend in Chicago, which was totally needed after last week’s heat wave. My Saturday consisted of an early morning trip up to Wisconsin to do a small group fitness session with a group of ladies on a Bachelorette getaway. I was so impressed they thought to incorporate a group workout into their weekend festivities, and I will definitely take note of this idea for my own future girls’ trips! After our session was over, I left the ladies with some Curate Bar options, so they could refuel post-workout. A big thanks to Curate for donating bars for this event!
Once I was back home, I made myself a little brunch of scrambled eggs and avocado. Then, I decided to hit up an afternoon Barre class, which was sweaty, fun, and intense all rolled into one! My arms were pretty shot from doing the morning workout routine (and practicing it the day before) so I didn’t even use weights during our class, but definitely still felt the burn!
After class, I headed home, where I hit a wall of exhaustion. We opted to spend the rest of the night in with movies and homemade pizza. We ended up making a BBQ chicken pizza (shredded chicken, BBQ sauce, red onion, garlic, mozzarella, feta, and yellow pepper) along with a side salad. Matt suggested we watch 33, the movie based on the true story of the 33 miners who were trapped when a gold and copper mine in Chile collapsed back in 2010. Although it was an intense, and at moments, sad movie, I ultimately loved it. The perseverance of not only the miners, but those involved in the rescue who refused to give up hope, despite all odds, was inspiring. I cried like a baby at many points during the movie (I think I was just tired…)
Sunday we were up nice and early, so I scooted right to the grocery store after breakfast to avoid the bigger crowd later. After looking at my Whole Foods app, I knew the Wild Caught Coho Salmon was on mega sale, so immediately that went on the menu for the week! (People often ask me how bad our grocery bill is each week and truly, it’s not bad at all. I’ll dedicate an entire post to this in the future, but in general, I only buy high-priced items, like salmon, when they’re on sale).
After Whole Foods I did a bit of cleaning at home while sipping on coffee before it was time to head to the suburbs for bridesmaid dress shopping! We think we have the dress and color picked out, but may look into a few more boutiques before officially sealing the deal!
After dress shopping, I made a quick stop into Trader Joe’s to get the remainder of our groceries for the week (another tip-things like hummus, feta, almond milk, chicken- I’ll grab those at Trader Joe’s since it’s typically less expensive than Whole Foods for these staple items). I ended up getting the ingredients to make mango energy bars for this week! (Think Lara Bar, but with Mango and coconut…) I made these a few months ago and they are, by far, my favorite “energy” snack I’ve ever made! I’ll share the recipe soon!
After Trader Joe’s, I made myself a part snack/part lunch- an apple with peanut butter, tortilla chips with hummus, and a granola bar. (Just one of those odd meals when you really don’t want a full meal, but you end up with a full meal of snack foods). Then my husband and I spent some time reading outside on our porch, soaking in the gorgeous weather.
The rest of the day was a bit of a lazy Sunday of watching golf, tidying up, and doing a bit of food prep! We had taco bowls for dinner and ended the evening on a sweet note with his and hers Dairy Queen treats! That’s a wrap on my weekend…onto the dinner menu for the week!
This week consists of simpler dinners, as we will be heading out of town Thursday night for a wedding! Anytime we have upcoming travel, I keep it EASY- planning dinners that require little prep, in case I’m tied up with doing last minute errands before leaving. No one needs added stress before travel!
- Sunday: Burrito bowls with brown rice, grass-fed beef, lots of chopped peppers, onion, and salsa..
- Monday: Salmon with a roasted tomato, red onion, garlic, and spinach topping served with brown rice.
- Tuesday: Chicken in a soy, ginger, and coconut-amino marinade served over a kale and cabbage salad.
- Wednesday: Brown rice pasta with organic marinara and sliced spicy Italian sausage.
- Thursday: Turkey sandwiches with a side salad (before we head to the airport).
- Friday- Rehearsal dinner festivities!
On a totally different note, I cannot believe it’s August…why does summer fly by in such a flash? I’ve still got some summer bucket list items to check off before it’s officially fall: kayaking on the Chicago river, hitting up a unique, ma and pa ice-cream shop (I don’t know if this exists yet…help me out if you know), another bike ride at Old Plank Road trail, and rooftop drinks. Until these are complete, it shall remain summer… 😉
