Happy Monday to you! Hope your week is off to a great start so far. First, a quick weekend recap! I don’t know about you, but I have fall fever for sure-I’ve always loved fall, but this year we’ve really been trying to take advantage of the lingering, warmer temperatures and soak in every precious moment outdoors that we can. Sunday, we drove up to Lake Geneva, Wisconsin to enjoy the perfect fall weather and walk the lake shore trail. The entire trail is 22 miles, so obviously, we didn’t come close to completing the trail in its entirety, but we got in a decent 5 miles of walking, plus many stops along the way to soak in the views!
We ate packed lunches from home on a bench overlooking the lake before we began our walking excursion! I’m glad we opted to bring lunches because we ended up staying in Lake Geneva for dinner and drinks, so bringing them from home saved us some money and kept our afternoon meal on the healthy side!
Little signage along the path to guide you…what is so fun about this path is it literally bumps up against the properties of the beautiful homes along the lake. At some points, you are almost winding in and out of these homes’ front and backyards.
We thought about walking to a further point along the trail and taking the ferry back to our starting point, but since Matt was battling a little cold, we decided on a shorter trip. I would definitely go back another time and try out the longer route + ferry option!
After our walk, we decided to head to Sprecher’s for an early dinner and some drinks.
Sprecher’s is known for German food, good beer, and the yummiest root beer. We ordered brats and salmon to split, along with some beer flights. We also ordered a combo case of root beer and cream sodas to go. Interesting fact…I was pleased to see the cream soda only had 4 grams of sugar per serving…in contrast to the root beer’s 29 grams per serving. I would definitely not have thought this was the case, but since I LOVE cream soda, I was pleasantly surprised that this childhood fave is actually not a bad option!
When we got into town, we saw a cute, little ice cream shop and even though I told myself I was going to take it easy on my ice-cream intake for a few weeks, I couldn’t help but get a couple scoops from this local establishment. I am so glad we decided to pop in there because they had a seasonal fall flavor called Snap O’ Lantern: pumpkin ice cream with ginger snap cookie crumbles and oh. my. goodness… it was divine. For some reason, I find ice cream from ma n’ pa shops to be the best ice cream around…the smell and old school feel of “true” ice cream shops just can’t be beat!
We savored our ice cream while watching the sun set over the lake…such a fun, pretty moment! Then, it was time to make the trek back home! I’m so glad we spent the day in Lake Geneva- it gave us the chance to be active while enjoying the feel of a lake town along with gorgeous scenery…my favorite kind of day.
And that’s our Sunday in a nutshell 😉 Friday night, I laid low…Matt had been away on business and got home at about 9 pm. Before he arrived, I indulged in some girly things: red wine + old episodes of Sex and the City. Saturday, I enjoyed a lovely wedding shower for my cousin and his beautiful bride-to-be! I could kick myself for not snapping a few photos because the shower was beautiful- fall-themed with pretty lanterns, fall flowers, and votive candles on every table plus an impressive candy and cupcake station that consistently had a high traffic volume!
And now, onto the weekly dinner menu! Lots of simplicity this week as we try to use up what we’ve got on hand. Matt has a work dinner this week as well, so I usually try to keep nights like that to leftovers or “using up what’s in the fridge” type dinners!
Weekly Dinner Menu
- Monday: Whole wheat pasta with sauteed onion and spinach plus sliced apple chicken sausage. Tossed with a lemon vinaigrette.
- Tuesday: Crock pot salsa chicken (this is the EASIEST dinner on the planet: chicken and fresh salsa in the crock pot (low for 6-8 hours) and boom, dinner is served. We will have the chicken over brown rice topped with some chopped veggies and homemade guacamole.
- Wednesday: Cabbage and Ground Turkey Skillet: this will be my “experiment for the week.” I’ve seen a few recipes for something similar to what I’m envisioning, but not quite what I want flavor-wise, so I’ll be mixing and matching to try and create my own version.
- Thursday: Most likely, breakfast for dinner for me, since Matt will be out. I’m thinking a quick fritatta will hit the spot!
- Friday: TBD- Friday is usually our date night, so we play dinner by ear!
