Happy Monday to you! Hope you had a lovely weekend! Our weekend was full of Cubs, Cubs, some golf, and more Cubs! Since I had to be up early on Saturday morning for some training, our Friday was a low-key, cozy night in. We watched a little Game of Thrones, followed by the Cubbies before hitting the hay. For dinner, we grabbed a Rotisserie chicken from Whole Foods and roasted some sweet potatoes and acorn squash to have along with it. Saturday went by in a flash- a mix of work-related activities, Pure Barre training, and of course, the Cubs.
Our “adventure” day for the weekend was Sunday, when we headed out to meet my parents at their golf club for lunch and a few holes (of sheer embarrassment…at least for me).
Even though it was a little gray and chilly, it was still a beautiful, fall day and I was excited to spend some time outdoors, even if golf isn’t one of my strong suits.
After lunch, we headed out for a some practice swings, and for me, a quick lesson from my dad, who is an amazing golfer. I’ve never had patience for golf- I’ve taken lessons before, but never really stuck with it long enough to make any progress. Yesterday, I happily listened to some advice from my dad because for whatever reason, I now have a desire to be somewhat decent at golf.
We only did a 3 hole practice round, and that was a perfect amount for me. I was thrilled that by the end of our excursion, I was at least consistently making contact with the ball and had a few decent swings. Who knows? Maybe come spring I’ll take some more lessons and be confidently playing by next fall.
And now for the weekly dinner menu! I’m excited for the recipes this week- lots of fall flavors going on! Matt will be doing some traveling this week, so I’ll be relying on some leftovers to hold me over for a few dinners. Here’s what I’ve got planned…
- Monday: Pumpkin Turkey Chili (this is essentially a basic chili, with some canned pumpkin and pumpkin spices added in, so I’m eager to see how this combo will taste!)
- Tuesday: Chicken Primavera from the Whole 30 cookbook
- Wednesday: Chicken Chowder, also from the Whole 30 cookbook
- Thursday: leftovers, or spaghetti squash with marinara and fresh basil
- Friday: TBD
As you’ve probably noticed, Friday’s I always leave open. We love to throw a dinner date into the mix every once in awhile, so I rarely plan a meal for a Friday. That way, if we make last minute plans, either just the two of us or with friends, I haven’t already bought food for Friday. Just thought I’d share that because you will probably never see a definite plan on my menu for a Friday!
