Good morning! Hope you had a fantastic weekend! We had a lovely dinner date Friday followed by Game of Thrones binge watching, Saturday was dedicated to Pure Barre prep and household chores, so Sunday was the highlight of the weekend for me. I met up with 3 of my girlfriends at the Chicago Botanic Gardens for an afternoon walk and talk session. The weather was beautiful- sunny and cool with crisp air. I hadn’t been to the Chicago Botanic Gardens for many, many years and I forgot how lovely it is- so many pretty paths to walk and gorgeous scenery at every turn.
Though I didn’t pay attention to the time at all- we probably got 2 hours of walking in. We also grabbed a bite to eat at the little cafe on-site- I was really impressed with the selection of food: lots of healthy soup, salad, and sandwich options. I got a butternut squash bisque that was delicious. They also have a coffee bar at the Gardens, so if you’ve been wanting to plan a trip there, know they have great food choices and coffee/lattes/specialty drinks available.
From the moment you enter, there’s so much to take in- lush green grass, weeping willows, and beautiful waters.
My girlfriend was explaining to us that yellow roses symbolize friendship (which I had no idea) and no sooner did she say that, we came across a small, yellow rosebush. Our friendship rose…
It was so nice just walking around, being in the fresh air, and catching up with these wonderful gals! Crazy to think the holidays are just around the corner and we’re still able to spend so much time outdoors, minimally bundled. After such a great experience at the Gardens, I am considering getting a membership for the year- you can ride bikes on the trails that surround the gardens, there are discounts on year-round events, and it’s just a great place to go and get some running/walking in, all while getting to see the stunning scenery.
And now, for the dinner menu:
- Monday: Spaghetti Squash with sauce (maybe a little Italian crumbled sausage added in)
- Tuesday: Cobb Salads
- Wednesday: Butternut Squash and Cranberry Salad with Rosemary seasoned chicken thighs
- Thursday: Grilled cheese with tomato soup (we’ll use Ezekiel bread)
- Friday: TBD
