My thoughts and prayers go out to all those experiencing the devastation of Hurricane Irma. I also pause today to remember those who lost their lives, or whose lives were forever changed by the events of September 11, 2001. We will never forget.
And just like that, it’s Monday! I hope your day is off to a fabulous start! I am definitely excited for the start of a new week, not for any particular reason, I just sense it’s going to be a good one! Some fun things happening this week: Matt’s birthday is Tuesday (woo woo!) and Thursday I will teach Empower for the second time (I subbed in at another studio last week, so that was my first go at it).
I’ll be doing some more recipe testing over the next few days…still working on a healthy pumpkin cream cheese frosting to pair with my favorite pumpkin bread. I’m also trying out a coconut curry chicken recipe (as you’ll see below in the dinner menu).
And with that, here’s an extremely brief weekend recap, followed by our dinner plan for the week! Happy Monday, friends!
Matt and I cancelled our dinner reservations downtown and decided to do a date night in. We made pasta, sipped on some wine, and watched the movie Nocturnal Animals, directed by Tom Ford. (For the record, I wasn’t a fan of the movie- a little too dark/disturbing for my taste).
I was up bright and early Saturday, so I began my day with a hot cup of coffee and some blog work. Then, I headed out to Pure Barre to tackle a Classic and Empower class back to back (studios are allowing clients to do both in the same day). I likely will not do that often, but it was a ton of fun and an awesome way to start the day! After PB, I headed home for lunch and an afternoon of cleaning, organizing, and relaxing. I did plant some mums that I purchased Friday afternoon and gave our porch a good cleaning!
Matt and I walked to Whole Foods Sunday morning to get supplies for homemade pizzas. We grabbed Simple Mills Almond Flour Pizza Crust as our base and then each picked a few toppings. Sunday afternoon, we hung with my family at my littlest cousin’s 10th birthday party…I just love an afternoon filled with family, football (but, I mean come on Bears), and delicious food. Once we were home, we did a quick tidy-up in the kitchen, watched more football, and then made our homemade pizzas. I ended up ordering a 3-pack of the Simple Mills crust on Amazon because I foresee many more homemade pizza nights this fall and the price was too good to pass up. (An individual box at Whole Foods is $7.99; vs. $5.99/box in this pack- yesterday they also offered an extra 20% off coupon).
WEEKLY DINNER MENU
I’ll be solo a few night’s this week for dinner, so I’m doing one simple dinner and one experimental dinner one (that way if it’s bad…no one has to know).
- MONDAY: Pizza pasta bake (we have leftover pizza sauce and mozzarella cheese, so for meatless Monday, I’m doing a baked pasta of sorts using our leftover pizza supplies) I found this —> Betty Crocker recipe that I’ll use to execute this dish, but we’ll be doing a meatless version, and I’ll likely make a few tweaks here and there.
- TUESDAY: Hilary’s burgers over greens with veggies and hummus
- WEDNESDAY: Coconut curry chicken and rice (this is my experimental dish for the week)
- THURSDAY: BBQ salmon burgers with sweet potato fries
