Happy Monday all! This weekend flew by, but it was a good one and I am especially grateful for the bit of sunshine we experienced (I don’t know about you, but I am ready for spring already).
After my Friday evening classes, I headed home and Matt and I made BBQ chicken salads for dinner (I precooked the chicken earlier in the day so it was ready to go when I got home). Our salads had chicken, shredded red cabbage, tomatoes, and pepper. We drizzled everything with a bit of Tessemae’s Ranch Dressing- an easy, tasty meal. We watched a few episodes of Shameless before hitting the hay.
Saturday morning started off on a quiet note…I made some coffee and curled up on the couch to relax before doing a little meditating (I have an extremely active mind, so I am working on consistently meditating each week). Following coffee and relaxation, I whipped up a smoothie, got ready, and left to take a Pure Barre class. The 20 classes in 31 days challenge is wrapping up at one of the studios I teach at, and I am one class away from completing it (woo woo!)
On my walk home from Pure Barre, I decided to stop at the grocery store and grab just a few items for this week, since I knew I wouldn’t get to the store on Sunday. The rest of Saturday was low-key- cleaning, laundry, and a bit of meal planning. Matt went out Saturday evening, so I made Warming Rainbow Pad Thai from Oh She Glows (yes, again- I am obsessed) and cozied up on the couch to watch The Intern (such a sweet movie if you’ve never seen). Then, it was early to bed since I had to work Sunday morning.
Sunday I taught two classes at Pure Barre, then hustled home to eat and get ready to go see my cousin’s play at DePaul. After the performance, all my family members who came to watch, went out for pizza dinner at La Crosta in Lincoln Park. It was so wonderful to be surrounded by my crazy, loving family all day.

In all honesty, I’ve had an aversion to certain meats ever since having the flu, so you may notice more plant-based, vegetarian, and fish dishes in my menus. This isn’t to say I’m cutting out certain meats entirely, I’m just rolling with what my body is craving and enjoying trying out new, fresh recipes!
- Monday: Brown rice pasta in a lemon, garlic, butter sauce with flaked salmon (salmon is on sale at Whole Foods- good time to get it!)
- Tuesday: Rainbow Pad Thai (with a few modifications- Matt has yet to try this one so I wanted to make it for him)
- Wednesday: Shrimp tostadas
- Thursday: Sweet potato hash with Hilary’s burgers- either bean burgers or black rice burgers (sweet potatoes diced and baked (crisp) with onion, pepper, black beans, and topped with the Hilary’s burgers
- Friday: TBD
Goals this week:
- Meditate 4-5x
- Pure Barre 4-5x
- Foam-roll & stretch, 2x
And finally, since I’ve gotten some requests to share more clothing items, I wanted to share a few Loft and Nordstrom pieces I think would be fantastic for a Valentine’s Day! (Speaking of Valentine’s Day, you can click here to see my V-Day date ideas from last year!)
I think a pretty lace cami under a cardigan is such an easy, effortless look for a Valentine’s Day date. I also love just a simple, white or black top with statement earrings (I own and love these earrings). Dates aside, I am obsessed with this “love” sweater for a sweet, day-time look. Loft is currently running a mystery sale (aka 50% off everything), so it’s a great time to grab a few pieces for V-Day if you’ve had your eye on anything!
