Morning friends! I hope you’re feeling refreshed from the weekend! We just returned from Omaha, where we spent time visiting with family and cheering on the Huskers. This mini trip came at the perfect time for us…the last month or so has been incredibly busy, traveling for Matt, schedule changes for me, and overall just packed with a mix of work and social events- I definitely felt like I needed a few days away from our normal routine to relax, unwind, and be with our family. I’m blessed to have the most wonderful in-laws who make even quick, two day trips incredibly special. Here are some highlights from our Omaha weekend…
Matt’s dad picked us up from the airport late Friday morning and we headed to a new-to-us spot for lunch!
We ate at Kitchen Table in Downtown Omaha, a cozy, dimly lit cafe that serves up some delicious sandwiches (among other things). I chose the grilled eggplant sandwich, smothered in mozzarella and tomato jam- such a comforting, delightful sandwich combo.
Since it was a chilly, rainy day, I also ordered a cup of veggie soup to start- which was amazing as well. I was so impressed with the charm of Kitchen Table…exposed brick, vintage touches, a wall of greenery…it made for an all-around, utterly pleasant dining experience.
After lunch, we stopped by a Nebraska Husker store to grab new tees to wear to the game Saturday. The rest of our Friday afternoon was spent relaxing at home. For dinner, we went to Paragon in Dundee, and I think it is my favorite restaurant in Omaha to date! The ambiance of this restaurant is awesome… dimly lit (my favorite), high ceilings with wood beams, gorgeous ball chandeliers, and cozy seating.
We started with a few libations and two incredible apps…pea avocado ricotta toast and baked shrimp scampi. I pretty much inhaled my share of both appetizers within minutes…both were so incredibly delicious.
For my entree, I chose the short rib, which was amazing, but by the time it arrived I was pretty darn stuffed from all the appetizers. If you are ever in Omaha, be sure to check out Paragon!
Saturday, also known as Husker game day, started off incredibly rainy…the perfect excuse to start the day slow, curled up on the couch with coffee. By noon, the skies cleared, the sun was out, and we were ready to hop on our party bus and head to Lincoln, Nebraska for the Husker game!
Our Omaha friends arranged to have a bus take a group of us from Omaha to Lincoln for the game, which was such a blast. Once in Lincoln, we hopped into a few bars and tailgates before heading into the game.
Although Nebraska lost, attending a Husker game is never disappointing. The stadium is a sea of red (and black- it was a blackout game) and truly, it appears every seat is filled. Nebraska fans are without a doubt the most intense, devoted fans I’ve ever experienced… loud, passionate, tailgating gurus…just walking through Lincoln on game-day is an experience in of itself.
Sunday brought another gorgeous day…we had plans to check out the Lauritzen Gardens with my mother-in-law, Patti. The gardens were absolutely beautiful…so many different, themed gardens throughout the grounds…and many nooks to sit, relax, and soak in nature.
And that’s a wrap on the weekend! The weekly dinner menu is pretty uneventful this week since I’ll be out for dinner two of the nights, but here it is!
- MONDAY: Out to dinner with my dad 🙂
- TUESDAY: Making a potato/chicken hash (think chopped potatoes cooked in ghee with onion, garlic, parsley…and chopped chicken added in) not exactly sure what else I’ll throw in there for flavor, but I will let you know if it ends up being good!
- WEDNESDAY: Out to dinner with a group of my girlfriends
- THURSDAY: Tacos (we’re thinking steak tacos in a Siete almond flour wrap or in a lettuce wrap)
- FRIDAY: Homemade pizzas with Simple Mills crust, (the 3 pack I like to order is currently $17.97 – an awesome deal if you’re wanting to try!)
