Good morning! Hope you had a wonderful weekend!
I didn’t do my complete grocery haul this weekend- I was car-less, so just got what I could carry! Here’s my mini load from Whole Foods…
At Whole Foods, I just grabbed our basics: eggs, bananas, yogurt (Siggi’s is still on sale!), and strawberries. Then, I got what I needed for tonight’s spaghetti squash lasagna, plus corn and steak that we’ll use in two different, upcoming dinners. The rest, I’ll grab at Trader Joe’s tonight!
Speaking of dinners, here is my weekly dinner menu. I feel like I’ve been in a bit of a cooking rut (eating a lot of the same things), so I really want to stick to my plan and enjoy some of these new, tasty meals!
New for me, is the Steak and Peach Salad- I really want to take advantage of peaches still being in season, so I thought this was a perfect, summer salad. Another new one will be the Garlic-Parmesan Salmon. I’ve been patiently waiting for salmon to go on sale the last few weeks, to no avail. My hankering for salmon is at an all-time high, so if there’s no decent sale by Friday, I’m splurging! I really do try to grab expensive items, like salmon, when they’re sale-priced, but sometimes you just have to pay regular price (insert eye-roll)!
- Monday: Spaghetti Squash Lasagna
- Tuesday: Steak and Peach Salad (with blue cheese)
- Wednesday: Black Bean & Chicken Quinoa Salad
- Thursday: Mediterranean Pasta Salad
- Friday: Garlic Parmesan Salmon
- Saturday: Chili for the first Nebraska football game*
*My husband’s family has a tradition that for every Husker game, you make a huge pot of chili and you fill your bowl every time Nebraska scores. Saturday’s game is a night game, so chili for dinner it is!
I’ll health-ify the chili a bit by adding lots of chopped up veggies, using grass-fed ground beef, and topping with some nice, ripe avocado. I also grabbed an organic chili mix at Whole Foods to try out! (Typically, I make my own chili mixture, but it’s always nice to cut back on time spent in the kitchen, especially on the weekend!) I also love serving chili with a side salad to make sure there are greens involved!
